Ingredients
10 Potatoes.
Beef cubes4 Onions
2 large Tomatoes
2 cups tomato paste.
Cardamom, crushed
Salt and Pepper

Preparation
Cut 1 onion into 4 pieces (this goes with the meat when it is boiled). Cut the remaining onions into ring slices and place them in a cooking pot, and keep the other onion for later use.

Wash and peel the potatoes and cut them into thick slices and put in the pot, add water to cover the ingredients and add the tomato paste and salt and pepper to taste. Boil the mixture for about an hour until the potatoes are cooked.

In the meantime cut the beef into 2x2x2cm cubes and put in another pot with the remaining onion and the cardamom. Boil for about 1/2 an hour.

Preheat the oven. Layer the potato, onion and tomato slices in the oven dish together with the beef cubes. Pour the beef broth resulting from boiling the beef in the oven dish, and put the dish in the preheated oven. Cook until the potato become red in color (10-15 mins). You might need to add more broth if all the water is absorbed before that.

Kid’s participation
Suggest, always at the discretion of the parent or responsible adult and depending on age, the child to wash the vegetables and layer them in the oven dish.

Presentation
This dish is served hot with White rice as a side dish and Green salad

Nutritional & cultural curiosities
Potatoes were not part of the Ancient Egyptians diet as it only entered Egypt during the 1800’s. However this dish is an Egyptian classic that is very flavourful and is usually eaten with White rice (yes a lot of carbs at once). This dish is considered an easy, filling and potentially impressive dish. Other optional vegetables can also be added according to the taste which adds a whole set of vitamins and protein (due to the meat) to the menu.

Useful tip
This is the quick way of cooking this dish and requires less time than cooking everything in the oven from their raw state (using thinly sliced potatoes).
