Karkadeh Drink

Karkadeh Drink (Egypt / 4 servings/ all seasons/ 25 minutes)

Deep pan
Fine hole sieve

6 cups water
2 cups dried Hibiscus leaves (Karkadeh)
Sugar to taste

Herbs: Karkade (Hibiscus)

In deep pan heat karkadeh and water over high heat until boiling, reduce heat and simmer for 15 minutes. Strain karkadeh using fine hole sieve. To leave out herbs at the bottom of pan, don't pour karkadeh into sieve directly from pan but use a cup to pour liquid into sieve. Add sugar to suite your taste and stir until dissolved (you can add more water if needed. Pour in bottle, leave to cool then refrigerate until serving.

Kid’s participation
Suggest, always at the discretion of the parent or responsible adult and depending on age, the child to participate in filling the pot with water and pouring the Karkadeh through the hole sieve. Furthermore the kids can also participate in pouring the Karkadeh in bottles. .

Karkadeh can be served both hot – as a tea -  or cold according to the season.

Nutritional & cultural curiosities
Karkadeh is very popular in Egypt. On a typical Street in downtown Cairo, one can find many vendors and open air cafés selling the drink. While hot Karkadeh is excellent in increasing blood pressure, cold karkadeh calms down high blood pressure. Chilled karkadeh before bedtime will help to fall asleep quickly and sleep well. Karkadeh  can come as a very dark red / purple colour.  This has more flavour than the light red variety.  This lighter variety is also more acidic.

Useful Tips
Karkadeh can be also bought as teabags and prepared as a hot tea and then chilled to be served cold.
